I’ve been searching high and wide for a food truck/cart that serves a proper Mexican Baked Potato. To my dismay, they are rather hard to find here in Orlando… So I went ahead and made them myself. Dare I say, they are pretty dang great. Here’s the recipe for my Mexican Loaded Baked Potatoes.

We’re talking crispy russets filled with seasoned ground beef, melty cheese, guac, and sour cream. It’s like taco night and baked potatoes had a very delicious baby.
