Hey Squad!
This week’s plan is all about balance — we’ll be making the most of a Costco rotisserie chicken by turning it into three totally different dinners, without it ever feeling like leftovers.
To keep things fresh, I’ve also built in a light vegetarian meal to give you a break from chicken, and we’ll finish the week with a hearty steak dinner that feels like a little reward after the busy weekdays.
